Dessert wine
The main feature of dessert wines, in addition to the high percentage of alcohol, is the high percentage of sugar. They are usually produced by adding alcohol (usually wine distillate) to the wine at the end of the fermentation, thus stopping the fermentation. Because of this, dessert wines are sweet, with a high percentage of grape sugar that yeasts have not been able to completely convert to alcohol. Dessert wines are drunk as an aperitif before meals, or after meals with cakes or fruit. The wine must be sweet enough to match the taste of the dessert, and at the same time complete the sweet pleasure. We offer you “Slatka mala”, a unique sweet tamjanika from the Budimir Winery and “Višnjica” from the Jović Winery, produced with original technology of a specially cultivated autochthonous cherry variety.

White wine
Light white wine with pronounced acids goes perfectly with appetizers, while fresh white wine with fruity aroma is recommended with less fatty dry meats, garnished with light cheeses, melons, white grapes and canapés.
Fish prepared in different ways, with or without sauce, pairs well with dry white wine.
When it comes to meat, grilled white meat is complemented by dry white wine (Sauvignon Blanc).
Dry sweets, without chocolate, are well paired with white sweet and semi-sweet wines.
Chardonnay
Chardonnay is a very widespread variety, especially in colder climate, and it is equally popular in Europe and the New World. Refreshing, drinkable, elegant and aromatic wines of a mineral character with floral and fruity aromas are produced from this sort of grapes. The fullness and juiciness vary depending on the climate, so it is produced in multiple styles. Chardonnay is a medium to full-bodied white wine with flavors of yellow citrus, peach, apple and tropical fruit (bananas and pineapples), and it often tastes of cinnamon and caramel (it has spicy notes when ripes in barrels). It can also be sparkling. It goes well with chicken, pork, mushrooms, creamy sauces and soft cheeses.

Coupage
Coupage is the process of mixing different wines, whether or not they are made from the same grape varieties. The aim of the process itself is to create a new wine, better than the individual wines used in the blending process. It comes after fermentation and ends with bottling.
Coupage changes individual characteristics of the wine (taste, color, acidity) and is not used to improve the inferior or mediocre wines, but only to extract the maximum qualities from those of good quality. Thanks to the flavors and aromas that blend in and fight for supremacy on your palate, these wines can be consumed with all the food recommended with white wines.

Rose
Due to their simplicity, specific charm and abundance of swaying aromas, these wines have become increasingly popular in the world, and also in our country in recent years. They are ideal for spring and summer, as they combine a light body and delicate aromas. However, they can equally be enjoyed if consumed as an aperitif, or with light salads, appetizers and desserts and on colder days, in some corner of the Stambolijski restaurant. Rose is very often the choice with roasted pork or lamb.
The color of rose itself can range from a light, delicate pink color to light red, a reddish hue. The color, as well as the aromas, depend a great deal on the variety from which the wine is obtained, as well as on the time the juice spends in contact with the grape skins. The traditional way of preparation involves keeping the red grapes in contact with the juice for a short time, and the shorter the time the lighter and gentler the wine’s color will be. Rose wines can be sweet, semi-dry or completely dry, which is generally the style of most European rose wines.
Muscat Hamburg
A delicate minuet of fluttering notes of roses will overwhelm you with chilly freshness. The long lasting finish leaves a full flavor of ripe wild strawberries. Ideal for cold starters, salads, grilled vegetables, grilled meat.

Coupage
By selecting multiple grape varieties a delightful fusion of flavors and aromas, authentic to each coupage separately, is created. You will be seduced by a slight hint of certain fruity notes interspersed with muscat aromas in every drop of a rose coupage. Each variety of grapes will blend the wine to its best characteristics, contributing to the overall impression by combining flavors and aromas with other varieties. In accordance with your own preferences, we recommend that you choose your favorite blend – because whatever you choose you will not be wrong. Enjoy a blend with some of the dishes we recommend in the general description of rose wines.

Montepulciano
A typical Italian wine in style, very rounded and full of fruity aromas. Each harvest is aged in brand new barrels. The wine has a distinct bouquet, it is ruby red with flaming reflections. Full body and complex, with warming it releases the flavors of fruits and flowers, fragrant spices. The most common are berries, blackberries, dried flowers, violets, vanilla, and there are clear indications of dark chocolate. As far as food is concerned, there is no dilemma: wine like this is looking for a good beefsteak.
